What are some vegetarian meals that taste good?

My brother and dad will not eat any vegetarian meals at all.Although I have cooked meals that had the morningstar farms fake chicken and they havent noticed.



So what are some good and easy vegetarian meals that taste good?What are some vegetarian meals that taste good?

How about potato pancakes with applesauce or sour cream? Serve with a great salad and crusty french bread or rolls and you have a tasty meal without the use of fake meat or chicken. There are loads of great tasting veg meals that don't try to be something they're not. Look them up on the internet if you don't already have some.What are some vegetarian meals that taste good?
There are some really yummy vegan enchilada recipes!



I cannot find the link to mine right now, grrr...



But it has zuccini and potatoes in it. They are so so tasty! I've had quite a few carnivores try them and they all LOVED them!
Cheese enchilada's



You take corn tortillas and just dip them momentarily on both sides in hot oil and then put on drain on a paper towel. You cut up yellow onion finely. You put 4 cheese mexican shredded cheese down the center of the tortilla and some onion. You can add anything else you may want in there but this is all I like. Then you roll the tortilla up tightly. You lie them all in a 9x13 pan if making a lot or smaller pan for a smaller batch. Then you get a can of the red enchilada sauce mild, stir contents after opening can and poor over the tortillas. One large can should do it for a large batch. Then you cover the top with the same shreded cheese and bake through at 350 until cheese melts.

Serve with spanish rice and vegetarian beens.

Skillet Baked Ziti

To complete this recipe in 30 minutes, preheat your oven before assembling your ingredients. If your skillet is not ovensafe, transfer the pasta mixture into a shallow 2-quart casserole dish before sprinkling with the cheese and baking. Packaged pre-shredded mozzarella is a real time-saver here. Penne can also be used here.



Serves 4

1 tablespoon锟給live oil锟?

6 garlic cloves锟? minced

1/4 teaspoon锟絩ed pepper flakes锟?

Table salt and ground black pepper锟?

1 (28-ounce) can crushed tomatoes锟?

3 cups锟絯ater锟?

12 ounces锟絲iti锟?3 3/4 cups)

1/2 cup锟絟eavy cream锟?

1/2 cup锟絞rated Parmesan cheese锟?

1/4 cup锟絤inced fresh basil leaves锟?

1 cup锟絪hredded mozzarella cheese锟?





Making the Minutes Count: Measure the water and the pasta before you begin cooking. Prep the Parmesan and basil while the pasta cooks.



1. Heat Oven: Adjust oven rack to middle position and heat oven to 475 degrees.



2. Simmer Ziti: Combine oil, garlic, pepper flakes, and 1/2 teaspoon salt in 12-inch, ovensafe nonstick skillet and saut茅 over medium-high heat until fragrant, about 1 minute. Add crushed tomatoes, water, ziti, and 1/2 teaspoon salt. Cover and cook, stirring often and adjusting heat as needed to maintain vigorous simmer, until ziti is almost tender, 15 to 18 minutes.



3. Add Cheese and Bake: Stir in cream, Parmesan, and basil. Season with salt and pepper to taste. Sprinkle mozzarella evenly over ziti. Transfer skillet to oven and bake until cheese has melted and browned, about 10 minutes. Serve.



Tostadas

Buy the hard tostada shells.

Heat in microwave vegetarian refried beans

Spread beans on shell

Sprinkle shredded mexican or taco cheese.

Zap in microwave to melt cheese.

Put on sour cream

Put on guacamole (bought or made) or just sliced avocado.

Put on shredded lettuce

Put on some cut up tomatoe

Put on anything else you may like.

Top with more shredded cheese and black olives if you like.

Serce with spanish rice.



Make easy Lasagna with no meat or the soy crumbled meat

Boil your lasagna noodles and drain.

Heat jar of non-meat flavored spaghetti sauce in skillet, stir in crumbled soy meat and heat thru.

Lie 3 noodles in bottom of 9x13 pan (I spray pam first in pan)

Spread some of the sauce/meat mixture on noodles.

Top with layer of shredded mozarella cheese

Put some ricotta if you like that.

repeat for next layer.

Lie 3 more noodles down.

Top with sauce (sauce needs to be covering noodles).

Top with layer of mozarella cheese.



Bake 350 until cheese melts and starts to bubble a tiny bit.



Serve with bought or homemade easy garlic bread.
