I've recently become a vegetarian so I'm not that used to it and I'm not sure what to eat. My mom is going grocery shopping this weekend so I don't have a lot of food options right now, so I did the best I could.
What I ate today:
Breakfast: Oatmeal, scrambled eggs, an apple, and apple juice
Lunch: Rice krispies cereal (I didn't feel like actually cooking food) and I drank some more milk afterward.
Snack: Pretzels and a glass of water afterward
Dinner: Broccoli, Apple slices, corn, and water

That's not too terrible, since you don't have much to choose from. In the future, you should definitely include more vegetables %26amp; fruit, and more whole grains instead of refined like pretzels %26amp; Rice Krispies.
Definitely go shopping with your mom. Get a variety of fresh %26amp; frozen veggies, fruits, whole grains like brown rice, quinoa, whole grain pasta, etc. and some canned or dry beans, tofu, etc. Maybe browse through some recipes before you go %26amp; make a list based on some that sound good to you. http://www.vegweb.com is a good place to start. You don't want to make things like Morningstar a regular part of your diet. They should be things you just keep on hand for every now %26amp; then when you don't feel like cooking or something. Even though they're veg'n, they're still highly processed %26amp; basically junk food.
That isn't too bad. You do want to try to incorporate more protein in there. Even peanut butter has protein, so maybe a peanut butter and jelly sandwich tomarrow, or grilled cheese. You could also make some pasta with dinner. When youg o shopping you could also get some tofu, which is cheaper, and probably healthier than frozen vegetarian foods. Baked beans are good as well and they do make vegetarian versions. It sounds like you got enough fruits and veggies, just add a little more protein, and maybe a slight bit more carbs, and you should be good.How can I improve my food choices?

1. pasta salad.. pasta lettuce tomatoe sweetcorn cucumber avocado mayo potatoe
2. veggie pies
3. casserole.. quorn (i can't spell hope you know what i mean) with peas and carrot layer of mash 4 potatoe then grated cheese cooks for about 30-35mins
4. french baguette stuffed with fried onions avocado jallapinios hot sauce peppers lettuce cheese then heat for a few mins
5. veggie burgers or cheese toasties
6. fish with green beans, potatoes, and white sauce
7. spaghetti or pasta with creamy garlic sauce mushrooms and olives
8. stuffed peppers
9. jacket potatoes stuffed with philadelphia cheese sweetcorn etcetc
there's just lots of options
