I need some help becoming vegetarian/vegan. I'd like to just start with the vegetarian side and see if I can work in some vegan food too.
But here's my problem: I've gone vegetarian about 5 times so far and it just hasn't lasted.
I live in the country and my sources of shopping for food are the Wal-Mart Supercenter and Cub Foods, both of which have poor selections in their natural foods section. Actually, Wal-Mart doesn't even have a natural foods section, but they do sell some of the Boca/Morningstar Farms.
The closest natural foods store is about 45 minutes to an hour away. I would love to shop at those stores, but the distance just doesn't make sense for me to go once a week or so. So I hardly ever go. Another reason I hardly go is because I am on a pretty tight budget. Also, my husband and daughter are meat eaters and I am not going to try to take that away from them.
One other problem that always hinders me is that I completely suck at cooking. I honestly can't cook worth crap.
How can I incorporate vegetarian/vegan meals into my food, and still have my daughter and husband eat meat with their meal?
What are some good breakfast and lunch ideas?
Sorry if this all sounds so completely lame or stupid, but I would welcome any and all help and suggestions. This is something I really want to do, but I am having such a hard time!

This is quite a tight spot you're in! I am a vegetarian and my parents eat meat.
My parents are now used to eating their meat at lunchtime so dinner can be veggified. Check out some vegetarian cookbooks from your library. That helped me.
If you absolutely cannot make dinner a vegetarian meal all around, make the side dishes (salad, mashed potatoes, colslaw, etc) a little larger and eat them as your main meal!
But a word of caution, make sure you still eat a balanced diet, as I'm sure you know. but a lot of us "Veggie haters" as my dad calls them tend to replace their meat with carbs such as bread and pasta. They miss that VEGETARIANS are suppose to eat VEGETABLES!

my advice for shopping would be king soopers there produce is better than wall mart by far they have way more vegan-vegetarian options and some health food stores can send you the food in there truck it works out fine

You can order from places like Whole Foods online I believe... well a lot of places actually.
What I did when I gave up meat for lent to trick my mind was make things like soups and stews. They're filling, cheap, and you don't miss the meat. I used mushrooms and they are sort of the same texture.
You can have it with rice or something like cornbread, too, and maybe you kid will like it.
This is vegetarian speaking, not vegan.
