i have very limited ingredients and have no time for grocery shopping. also, it has to be something that will have leftovers for my husband to bring to work tomorrow.
here's what i have to work with:
pasta ( less than half a package of rigatoni and a full package of spaghetti)
jasmine rice
frozen broccoli (not a lot)
morningstar farms veggetarian breakfast sausage patties
morningstar farms vegetarian chicken tenders
carrots
can of refried black beans
can of artichokes
lentils (actually, split pea dal)
small amount of baby corn and water chestnuts
a few slices of colby jack cheese
1 potato
can of vegetarian chili
package of frozen potato and cheese pierogies
vegetarian beef boullion cubes
flour/sugar/etc
butter/olive oil/canola oil
various condiments and spices
any ideas? something creative would be ideal.

Sounds like you have all the ingredients to whip up a pretty good stir fry.
Or rice and beans.
Or some kind of veggie soup, maybe you could cut up the veggie sausage and add that too?

Hello :) Here's a few things you could try....
Cook the vegetarian chili and add the re-fried beans to the chili. Add the baby corn, carrots and chestnuts and any spices you want to improve the chili. Cook up some of that yummy jasmine rice. Serve the rice with chili over it and a slice of cheese! I'm doing something similar to this tonight for supper, except I'm topping it with a tbsp of sour cream.
You could also do a stir fry with potato, carrots, broccoli, baby corn and chestnuts, artichokes and beans. you could serve it over rice or pasta(I usually mix my pasta so I have some spaghetti and some macaroni noodles, should work well with the rigatoni, though).
You could also cook your pierogies and serve it with the veg chicken tenders.
