No, buying pre-made frozen vegetarian food is just as bad in my opinion as buying frozen food in general. But when I first went veg, I too bought a lot of Morningstar and Boca products. Then later I realized how to start making my own mock meat..its not as hard as you would think and the overall cost is a lot cheaper. A lot of people do use beans for their hamburger patties...black, kidney, cannellini, etc. All you really need to find is vital wheat gluten, I buy mine at Whole Foods but I am sure any health food market would have it. Also they sell Seitan, which is another form of mock meat but the ones I used to buy from the market were never that great tasting. Making it yourself also is not a lot of work and the taste is 100x's better. Here's a recipe for the seitan

There is no health value to those. They are worse for you than heavily processed meats, full of chemicals and the natural ingredients so far away from it's natural form it isn't even recognizable. Gross. If you want to be a vegetarian, be a vegetarian. There are literally thousands of vegetarian cookbooks out there for all cooking skill levels. But why would you go vegetarian, yet eat something that looked, tasted and had the same texture as meat? Yuck. I think meat is gross in every way, that's why I stopped eating it. And I love veggies and can prepare them a million different ways, but never to try to seriously mimic a meat dish. If you want to eat meat, eat real meat, from ethical sources, such as locally farmed grass fed beef, locally raised free range chickens, and sustainable wild caught fish from local freshwater lakes. They are very processed but I think meat is much worse for you than they are. There are hormones, bacteria, excess fat, cholesterol and fear (OK I know that isn't an actual ingredient, but veg*ns will know what I mean) in regular burgers.
If it bothers you you can limit your consumption of processed veggie meat products or make your own lentil burgers or black bean burgers. Have you ever tried falafel?

Health value? Those are processed foods. Processed foods are very unhealthy, regardless of whether they are for vegetarians/vegans or meat eaters. Just because you decided to become a vegetarian, does not mean you have to eat these things. There are much healthier foods out there.
