Meat-free meals?

i am a vegetarian. have been for several years. i was wondering if anyone had any relatively quick and simple meal ideas where i could still get my protein and other things. also, i buy food for myself, so on a budget.

im also thinking about making the conversion into veganism. and yes, i have books and have done all my research. so any ideas to help that along are more than appreciated.

I was vegan for a period some time ago, and one of the best recipes I tried was a meatloaf made from ground pecans, cashews and pimentos, was really great, sorry I don't have the proportions , yummy..
My Mom is a vegetarian and I cook meat free meals for her. Here is a meat free dish which is quick and simple. Take some butter or margine or soy free margine if you like melt it and add onions and morning start burger crumbles saute until burger crumbles are hot and onions are tender. Add ketchup salt, pepper and water to make a sauce simmer until hot. Add to shell macaroni which has been cooked and you have macaroni shells vegetarian style. Simple to make great to eat and it taste good. Hope that you like.Meat-free meals?
in addition to allrecipes.com, you can look for ethnic recipes (i'm going to give you links at the bottom of this), which are fun to make, yummy, and a great change to soyburgers! many indian foods are vegetarian and the spices and flavours are both scrumptious and nutritious. check out the links i posted. they are probably mostly vegan recipes since i'm a vegan, but...
This makes 4-5 entree-sized servings, so it comes out pretty cheap. I make it once or twice a month, parceling it out into containers to take to work with me for lunch.



Southwest Beans %26amp; Veg

1 can black beans (I usually get the kind with cumin and chili in them)

1 can diced tomatoes (fire-roasted tomatoes are the best)

--OR 1 can diced tomatoes with chilies

--OR 1 1/2 cups of your favorite salsa

1 can corn

2 cups uncooked brown rice



Other things you can add:

Other veggies, chopped

Chili powder to taste

Cumin to taste

Minced garlic to taste

Minced fresh cilantro to taste



Cook rice according to package directions.

Put all other ingredients together in a pan and cook over medium heat until hot. Serve over rice.

Beans and Rice



Brown rice

Red potatos

Lentils

Louisiana Cajun Spices

Split peas

Garlic Powder

Curry Powder

Colonel Lee's Meat and Seafood Seasoning

Onion (chopped)

Navy Beans

If you plan on using dry beans, soak overnight.



Start rice cooking. Add as many or as few ingredients as suits your fancy. Most ingredients need to be put in as soon as the rice starts. Remember brown rice takes longer to cook and white rice, and I've found that it also takes more spice to flavor it. So don't be afraid to dump it in.



Serve and eat.







Veggie Bowl (I usually put this in a hollowed out french bread)



Ingredients



4 cups cooked rice

1 cup teriyaki sauce

2 Tbsp cornstarch

Assorted veggies (we used broccoli, cauliflower, carrots and onion)

Veggie chicken strips (optional)

Steam the veggies. When the veggies are steamed, add the cornstarch to the teriayki and mix well. Pour over the veggies and boil until thick.







Vegan Jambalaya



Ingredients



1 package Zatarain's Jambalaya Mix

1 package Green Giant brand fake hamburger

1/2 - 2/3 of a mediumish onion, chopped

Badia Louisiana Hot spice.

2-3 cloves garlic, grated.

Olive oil

Prepare the Jambalaya mix as per directions. Add some Louisiana Hot to the water when it comes to a boil.



Put oil in frying pan and heat, add garlic and sautee 'till fragrant. Add onions and spice. Sautee 'till done. Add fake hamburger and cover with hot spice. Stir 'till the fake hamburger is hot.







Pasta Soup



Yellow split peas

Green split peas

Minestrone soup mix

1 cup de-hydrated TVP Chunks (optional)

Pasta (macarroni, spagetti...etc)

1-2 Vegan beef boulion cubes

Re-hydrate the TVP. Throw everything else in a pot with water and cook. When peas are as soft as you like, add the TVP and eat. Simple. Be careful how much pasta and peas you initally put in, this stuff will expand!
